In this recent time, traditional food product is facing tighter competition with the modern food products both from local and foreign country. Traditional food products still have a big chance in local and foreign country potential market although it faces the tighrer competition. This thing happens because the traditional food product has own product positioning which shows the culture unique, ethnic, and territory. One of the weaknesses from the traditional food is the esthetics interest and traditional process of food product. This weaknesses positioned traditional food as a love-end class of society. The lack of commercial image making the traditional food harder to accepted in wide market segment, especially international market segment.

 

To improve and develop the image of traditional food and to motivate the interest of society towards traditional food, the innovation of local foodstuff that can be produce with international taste is a need, so it may accept by the consumer appetite. At last, traditional will have a high economic value. download
